PSP Cake
My co-worker's son was turning 8 years old. He wanted something unique, fun and delicious. So we decided on a PSP cake. It basically was a yellow cake filled with custard and covered in rolled fondant. All the writing was done with royal icing. Kevin loved the cake! And that made me sooo happy.

Got milk?
My husband's birthday was June 3rd and although I'm a baker, he is not that into sweets and he is so picky about the sweets that he does eat. I can never go wrong with chocolate cake because it pairs so well with milk which is a BIG love of his. I ended up baking him a Devil's Food Cake which was filled and covered in ganache (chocolate melted in heavy cream). He loved it and when I suggested him sharing with coworkers, he selfishly said no. I took that as a compliment!

Strawberry season
It's strawberry season and that means cool refreshing desserts like tarts, pies, cobblers and strawberry shortcake. For those of you that live in Northern NJ you can taste some of my desserts which are featured in a restaurant in Paterson, NJ. The restaurant is called "The Experience" and is located at 336 Chamberlain Avenue. They recently requested strawberry shortcake to pair with their Mother's Day dinner menu. Thought you might want a look at this tasty treat of buttery pound cake layered with vanilla flavored whipped cream and succulent strawberries. Yum-yum!

The shoe that inspired the cake

A customer placed an order for a 6" cake with accompanying "cupcakes" for a birthday celebration. The cake was to be covered in fondant and the colors were to be the same as a pair of shoes that the birthday girl (my customer) was wearing to the event. The "cupcakes" were in fact roses which were pink velvet cake. Unique right? When I heard pink velvet, I thought not a problem. Pink is just a few shades lighter than red, piece of cake! (get the pun?) Anyways, who knew that when you add pink food coloring to a chocolate cake it is no longer pink? At least not the type of pink you invision in your mind when you hear the color pink. Well, now you know. So ultimately it was a pink velvet cake, just more of a dark (very dark) shade of pink. The pink velvet roses were nestled on a bed of cream cheese frosting dyed in complimentary colors to match the shoes. Overall it turned out well, even though that day was very humid and muggy.

My love for baking started as a kid helping my Mother and Grandmother while they were baking. When I received my first cookbook at age 12, I felt unstoppable. After many years of baking for friends and family, I decided to step out on a limb and take my love for baking and creativity to the next level. I received my Pastry Chef certification from The Art Institute in New York City and never looked back.
It is my goal to create great tasting sweets (or confections....wink, wink) that not only taste good but look beautiful as well. I bake with love and from the heart. I believe that's what makes my desserts stand out from all the rest. I get great pleasure from making others happy and being able to make their event that much more special because of one of my creations. I want Confections of a Cake to be the name you think of for your next event.
